Beautiful zucchini, an onion, and seasonings can go a long way. Try this dish with dinner tonight.Not everyone is a zucchini fan, but this could be a good side dish to help people change their minds. It has a lot of Italian flavors and is a good alternative to roasting or sauteing.
This is a recipe that calls for a bit more prep work but its well worth it.
1 large zucchini or 2 medium
1 medium onion
1 & 1/2 tablespoon of tomato paste
2 tbs olive oil, divided
2 tsp Italian seasoning
Pinch of garlic powder
Splash of water, about 1 tsp, up to 1 tbs
Pinch of sugar
1/4 – 1/2 cup shredded Mozzarella, or Italian cheese mix
Salt and Pepper to taste
Preheat the broiler to high.
Slice the vegetables; Quarter the onion lengthwise and slice, slice the zucchini into rounds, on the thinner side.
Mix the zucchini with 1 tbs of the olive oil and 1 tsp of Italian seasonings, broil in the oven 7-10 till until lightly charred. Remove from oven and set aside. Lower the heat of the oven to 375 when the zucchini is cooked.
Heat a skillet over medium high heat. Add 1 tbs of the olive oil, add onions, and cook 5 minutes. Add the tomato paste, sugar, water, garlic, olive oil, salt & pepper, and stir. Cook 3 minutes to combine, then place the mixture on the bottom of your baking dish. Top With the zucchini slices, followed by the shredded cheese.
Cover and bake for 25 minutes in the 375 degree oven, uncover and brown under the broiler for 3-5 minutes, watch it closely. Enjoy!
