This is a recipe I stole, but I stole it from my mom, so I don’t think that counts. Her macaroni salad is something I would consider comfort food. It’s been a main side with our family as long as I can remember, and I don’t know anyone who doesn’t like it.
I only changed one thing about it and the change isn’t always welcomed with all members of my family. Get ready for it… it’s mayonnaise. Yep, that’s the “dressing” for the pasta salad, and my change was to use light mayo.
*Please know this is enough for a party of people to enjoy. Or have left over to eat for lunch.
16 ounces of Elbow macaroni
1/2 of red onion
1/2 of an English cucumber
1/2 a cup (give or take) of Dukes light mayo. Dukes is THE BEST, especially for this.
Salt and pepper to taste
Boil your pasta according to the packet instructions, drain and let cool while you prepare the veggies.
Dice the onion and the cucumber.
In a large bowl combine pasta, veggies, salt, and pepper. Add the mayonnaise in a bit at a time, more or less to your taste of “sauciness”.
Serve room temperature or cold.
