Beans Gary…. sounds like a funny name and it is. This dish got its name, which is a recipe by Gary, from one of our best friends, Sturge. When Sturge likes a dish you make, he likes to add your name to it. This one stuck.Beans Gary is baked beans. Simple, flavorful, and is great for a crowd. We often choose this dish to take to parties and family gathers.
2 (28 oz) Cans baked beans (I used one Bush’s Original and one Bush’s Boston Recipe)
16 oz Mild turkey breakfast sausage
1 Bell pepper
1/2 Red onion
Salt and Pepper, to taste
Extra virgin olive oil
Preheat your oven to 375 degrees
Follow the instructions on the package to brown your sausage and set aside. While the sausage is cooking, dice your peppers and onion.
Heat the same pan you used to cook the sausage to medium high, adding a swirl of olive oil to the pan, then add your peppers and onions, along with some salt and pepper. Saute the veggies for 5-10 till soften, giving them a stir every now and then.
Once the peppers and onions are done, combine them with the beans, and the sausage, in a large casserole dish.
*Tip- I like to add a couple table spoons of water to the mix as well, but is not needed. Also this is a great make ahead dish,you can just pop in the oven when you are ready.
Bake for 25-30 minutes till its a little bubbly, enjoy!
